La présente étude consancrée à la determination du role des moisissures qui colonisent les tubercules de manioc au cours de la fermentation ,fait partie d'un projet de recherche doctorale destinée à examiner la nature des principaux groupes de microorganismes rencontrés sur le manioc de fermentation sèche,à en determiner le role et les mécanismes d'action ainsi qu'à indiquer leur impact sur la technologie de fermentation sèche du manioc en vue des ameliorations éventuelles à y apporter.
