Le problème de la sous-alimentation et de la malnutrition constitue une préoccupation majeure de certains gouvernements, de certains organismes internationaux et de certaines conférences ou colloques mondiales. Si les USA constituent dans le monde une puissance économique, c’est en grande partie dû à l’agriculture et l’élevage d’où ils tirent leur fierté et prospérité sanitaire (ONGALA L., 1986). La consommation de la viande en général et de l’œuf en particulier est aussi vieille que l’humanité. Ils constituent les plus forts ressources protéiques jusqu’à nos jours. Comme nous le savons, l’œuf est le résultat de la fécondation par le spermatozoïde conduisant ainsi à l’embryon qui continue son plein développement en dehors de l’utérus chez certains animaux dont les oiseaux ; ceux-ci en sont les principaux producteurs (TSHISWAKA T. N., 1996).
